Miso Healthy Happy Cod

Ingredients

· 2 (6-ounce) cod fillets

· 3T organic low-sodium blond or white miso

· 1.5T Honey (I prefer Clover)

· 1/2 teaspoon toasted sesame oil

· 1T mirin (Japanese cooking wine)

· Toasted sesame seeds and scallions, for garnish, optional


Directions

Preheat broiler.


Rinse fish fillets and pat dry with paper towels. Combine miso, honey, sesame oil and mirin and stir well until honey is fully dissolved.


Brush equal amounts of miso glaze on each fish fillet. Place fish under broiler for 3 to 4 minutes, or until top is slightly charred and glaze has caramelized. Remove fish from oven and brush with remaining glaze. Lower oven to 375 degrees F. Cook an additional 5 to 6 minutes, until fish is flaky but not overcooked.


If desired, serve with toasted sesame seeds and scallions (use only green parts for SIBO or Lower Fodmap option).


Serve with a side of roasted veggies or a side salad. Get creative! Sometimes simple can be better. I often include a side of roasted garlic broccoli. It's very yummy!
