Banana Oatmeal Chocolate Chip Muffins

These banana oatmeal chocolate chip muffins are super simple, wholesome, satisfying and easy for on the go mornings. These Muffins Have Zero:

  • flour

  • refined sugar

  • oil

  • butter

This makes it the perfect muffin for the on the go! I typically like eating mine pre- or post-workout to give me a boost of energy from the clean carbs!

Also, each muffin is only 113 calories and has 3 grams of fat.

The Ingredients You Will Need:

Old fashion oats: You will need 3 cups total. Easy peasy! Dump it right in!

Baking powder + Salt+ Ground cinnamon + Protein Powder (this can also be optional but I like the added boost)

Eggs

2 Ripen Mashed Bananas.

Milk: I used unsweetened vanilla almond milk, but, regular dairy milk will work just fine or even water.

A few things to note: I simply used a mixing bowl with my easy hand held electric mixer. I would imagine you could also use a fork to mask the bananas.

I like to let the batter sit for 10 minutes after mixing is complete. This will give the oats a chance to soak up the almond milk.

This recipe makes 12 muffins total.

I've made my favorite Blueberry Almond Zucchini Muffins, my Healthy Morning Glory Muffins, Paleo Lemon Almond Blueberry Muffins, and my Paleo Healthy Blueberry Coconut Muffins for years and love all to this day, … but today I thought I'd add another basic one to the arsenal.... my Banana Oatmeal Chocolate Chip Muffins recipe!

INGREDIENTS:

  • 2 medium bananas

  • 3 cups rolled oats

  • 1 cup almond milk

  • 2 eggs

  • 2 scoops protein powder (you can also omit this)

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup chocolate chips

Preparation:

1.   Preheat oven to 350 °F. Prepare muffin tins with coconut oil or use paper muffin cups.

2.   Blend bananas and eggs until smooth.

3.   Sift in a bowl baking powder, oatmeal, cinnamon, and salt.  Add to the wet ingredients and incorporate well.

4.   Spoon or I like to use a ¼ cup measuring cup to fill into muffin tin and sprinkle with chocolate chips on top. Makes 12 muffins. Bake for 20-25 minutes. Let sit, then enjoy! Freeze extras for easy to grab snacks!
