How To Make Peanut Butter Oatmeal Cups

If you're looking for a nutritious, on-the-go breakfast or snack, peanut butter oatmeal cups are a great option. These cups are easy to make and customizable to your preferences. Here's how you can make them:

Ingredients used are:

  • rolled oats

  • oat flour

  • peanut butter

  • honey

  • vanilla extract

  • sea salt

  • chocolate chips

Step One:

In a medium mixing bowl, combine oat flour, maple syrup, vanilla extract and salt. Mix really well until ingredients are well combined.

Step Two:

Transfer to muffin tin with liners evenly amongst all 10-12 cups. Flatten out the tops as much as possible. Refrigerate or freeze for 20 minutes.

Step Three: In a small saucepan, over low heat, melt chocolate chips and peanut butter, stirring constantly until smooth and melted. Remove tray from fridge or freezer and drop 1-2 tbs of chocolate on the tops of each cup. Sprinkle with sea salt (my favorite part!).

Step Four: Eat them and devour them! So darn good and yummy!

Additional Notes:

  • Swap the peanut butter for almond butter or another nut butter of your choice

  • add in honey roasted nuts in batter for additional crunch

  • Add in dried fruit, such as raisins or cranberries, for extra sweetness

  • Top the oatmeal cups with chopped nuts or shredded coconut for added texture

  • Use maple syrup instead of honey for a vegan option

These peanut butter oatmeal cups can be stored in an airtight container in the fridge for up to a week, making them the perfect meal prep option for a busy week ahead. Enjoy them as a quick breakfast or snack on the go!
