Healthy Blueberry Scones

Homemade Blueberry Scones are one of my favorite breakfast items to eat! I really love the buttery taste of a scone, but also wanted to make sure I could make it without totally crushing my calories for the day.

These blueberry scones are so yummy and have just the right amount of butter to sweetness combo happening! They really turned out great, and I couldn’t be happier! They are made with healthy ingredients and only 6 items are needed to make them! Not only that, but they are super-duper yummy for a sweeter breakfast treat in the morning that is seriously irresistible.

HEALTHY INGREDIENTS

I love using healthy ingredients. Healthy Blueberry Scones are packed with juicy blueberries and filled with just the right sweetness from the maple syrup. The texture is amazing, it has a crunchy golden brown exterior but soft and moist interior that is jam packed with bursting flavors from both the blueberries and maple syrup.

How To Make Delicious Healthy Blueberry Scones

Making scones is actually really easy! They remind me of when I first moved to the East Coast and I would walk downtown to a café called Breaking New Grounds and I would get my favorite 1/2 caff coffee black with their oatmeal scone! The memories of this time in my life are so fun to reminisce about!

Step One:

In a medium mixing bowl, combine oat flour, protein powder, baking powder, and salt. Whisk really well until ingredients are well combined.

Step Two:

Add in butter, cold and cubed, cut it into dry ingredients until the mixture resembles pea-sized crumbs.

Step Three:

Mix in maple syrup, greek yogurt, and vanilla extract until it’s combined. Fold blueberries and then place into fridge for 20 mins. Meanwhile, preheat oven to 400 degrees.

Step Four: Work dough into a ball and transfer to a lined baking sheet. Press the dough into 1-inch thick disc and cut into 6–8 triangles.

Step Five:

Bake Scones for 13–15 minutes until the tops are lightly browned. Once out of the oven, sprinkle with sanding sugar if desired. Let cool completely and enjoy!

NOTES: Another way I like to make these are by combining a bunch of different fillings like cranberries, add lemon or lemon zest, chocolate chips, nuts or another filler you think you’d like!

  • 1 cup oat flour

  • 1/2 cup oatmeal

  • 2 scoops protein powder

  • 1/2 cup maple syrup

  • 1 tsp. Vanilla

  • 1/4 tsp salt

  • 6 tbsp butter, cold and cubed (sub vegan butter)

  • 1 1/2 baking powder

  • 3/4 cup fresh or frozen blueberries
