The Best Taco Soup

I love taco night at my house, so I thought why not create a yummy taco soup for lunch or dinner! It’s an easy, protein packed soup full of yummy flavor, plus it’s perfectly hearty and filling. It’s like chili but a bit soupier, and they can be related! Ha! Not only that, but it’s loaded with all the best taco style ingredients, that I know you’ll love as much as I do!

Last week, I needed a quick and easy dinner! I literally looked in my fridge and pulled together this soup in a flash! It was reallllly easy! Think superfast, hearty, healthy and EASY! Both of my boys loved and devoured.

This soup is really perfect for busy days and/or weeknights. Meaty ground chicken (or you could also use chicken breasts or thighs) and super simple ingredients to make this soup be a weekday favorite.

How could you go wrong with a soup that tastes like chili but a bit soupier in nature? It really is one of the best soups, plus it’s easy to make!

How to Make The Best Taco Soup

You could use regular onions, but I loved the idea of using leaks today. Leaks are a little easier to digest for me, as the green parts are low fodmap. If you like the idea of using a regular onion, I would use 1/2 onion in replace of the leaks below.

Leeks are rich in flavonoids, especially one called kaempferol. Flavonoids are antioxidants and may have anti-inflammatory, anti-diabetic, and anticancer properties, as well as other health benefits, which is kind of neat, so I decided to use them for today’s soup! Make sure to wash them under cool water, so you get all the dirt out of them prior to adding them to sauté with the garlic.

Add in the ground chicken in the large pot along with chopped onion, crumbling and stirring occasionally until browned.

Add in the chopped jalapeno and garlic during last few minutes of browning.

I like to use the Redmond Salt and Pomi tomato sauce, because it’s basically just tomatoes and not other hidden stuff! A lot of tomato sauces have garlic in onion in them but I prefer just using plain organic tomatoes.

Add a little extra protein with the Pacific Organic Bone Broth in chicken. This adds another 9g per cup, which I like because protein keeps you satiated longer. The sour cream I use to garnish with which I mostly buy lactose free and then crush some cassava chips on top! It’s soooooo good!

Lastly, stir in tomato sauce, chicken broth, cumin, chili powder, and salt.

  • Cover pot with lid and simmer 30 minutes, stirring occasionally.

Can I Make it in the Crock Pot?

Yes! To make it in the Crock Pot, just brown the onions and beef, and then garlic, and add mixture to the slow cooker. Then add broth, tomato sauce, and spices. Cover and cook on low heat 5 – 6 hours. Heat through, then add cilantro and sour cream, if using.

INGREDIENTS

  • 2 lbs ground chicken

  • 1 tsp salt

  • 1 jalapeño, seeds removed

  • 1 can of black beans, drained

  • 1 can organic corn, drained

  • 1/2 cup chopped leaks or 1/2 onion

  • 1 T chili powder

  • 2 T cumin

  • 26 ounces tomato sauce

  • 4 C chicken stock

Instructions: 

In a large soup pot, brown the chicken along with the onions and garlic, then add the jalapeño. Add remaining ingredients and simmer 30 minutes. Serve warm with cheese, avocado, tortilla strips, sour cream and/or fresh cilantro.

Can I Use Ground Turkey or Ground Beef Instead of Ground Chicken?

Yes, ground turkey, ground beef, or pork would work in this taco soup recipe. If you wanted to make it vegetarian, you could use lentils or another can of beans.
